Making this mint chutney is as easy as it gets — no cooking, just blending. Toss fresh mint, cilantro, green chili, ginger, garlic, yogurt, lemon juice, and a pinch of salt and sugar into a blender, then blitz until smooth. Add a splash of cold water to get that perfect pourable consistency. It’s fresh, spicy, and tangy all in one — ready in minutes and the perfect contrast to hot, crispy samosas.

MINT CHUTNEY

INGREDIENTS
  • 1 cup fresh mint leaves (lightly packed, stems removed)
  • 1 cup fresh cilantro (lightly packed, with tender stems)
  • 1/4 cup plain full-fat yogurt (Greek yogurt or vegan alternative works too)
  • 2 tablespoons fresh lemon or lime juice
  • 1 small green chili (jalapeño or serrano), chopped (adjust to taste)
  • 1 teaspoon fresh ginger, grated
  • 1 small garlic clove
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon sugar or jaggery (optional, balances the heat and tang)
  • 2–4 tablespoons cold water (as needed for blending)
GUIDE / INSTRUCTIONS
  • Rinse the mint and cilantro well. Remove the mint leaves from the stems and trim the cilantro, keeping only the soft, tender stems.
  • Add the mint, cilantro, chili, ginger, garlic, lemon/lime juice, salt, and sugar to a blender or small food processor.
  • Add the yogurt and 2 tablespoons of cold water. Blend until smooth. Scrape down the sides as needed and add more water, 1 tablespoon at a time, until it reaches a pourable but thick consistency.
  • Taste and adjust the seasoning. Add more citrus for brightness, salt for balance, or a bit more sugar if your chili brought too much fire.
  • Serve fresh with samosas, grilled meats, veggies, or just about anything that needs a punch of flavor. Store in an airtight container in the fridge for up to 3 days.
